How to hire a wine cellar builder

Start with one written project brief, then compare who owns design, field verification, enclosure, cooling, fabrication, installation, commissioning, and service. Ask every candidate for evidence and a proposal against that same boundary; portfolio images or a title alone do not establish the scope.
Set one evaluation brief before contacting builders
Document the room, storage and display intent, existing conditions, drawing status, target operating conditions, access, location, desired schedule, and decision date. Give each candidate the same information so that differences in their approach, assumptions, and exclusions can be identified rather than hidden in incomparable proposals.
Verify responsibility and relevant evidence
Ask who designs, measures, fabricates, installs, and coordinates the enclosure, cooling, electrical work, condensate, controls, racking, finishes, permits, startup, and warranty response. Request examples comparable to the intended room and clarify each firm’s role in that work. Independently verify licenses, insurance, or credentials when the jurisdiction and proposed scope make them relevant.
Test references, proposals, and handoff
Where references are available, ask about coordination, change orders, schedule communication, temperature or moisture issues, punch-list completion, and service after startup. Compare proposals against the same written brief, including exclusions, allowances, responsible trades, commissioning, warranty, and future service contacts. Resolve material gaps before selection rather than assuming they are included.
